Hi beauties this is my famous curry shrimp with vegetables. My family requests this dish at least once a week, because not only is it healthy, but its GOOD! And very simple for me to prepare. To make this dish all you need is olive oil, vegetables of your choice and a side dish I use Quinoa. I make it without using dairy products because of my husbands diet. The recipe is below please, let me know if you make it and send photos.
1- 1½ lb. extra large shrimp peeled and deveined
2- tablespoons virgin olive oil
1 teaspoons fresh minced thyme
large garlic cloves minced
1 medium onion chopped
2 green onions chopped
1 large zucchini
1/2 -1 Tablespoon curry powder
½ red bell/ green bell pepper diced
1 scotch bonnet pepper optional
Cajun season or salt to taste
Heat oil over medium heat in a sauce pan. Add onions, garlic, thyme, curry powder and sauté for about 2-3 minutes. If using scotch bonnet pepper add at this time. Add green onions, Zucchini and bring it to a boil then simmer for about 7-10 minutes. Toss in shrimp, and bell peppers. And cook for another 3-5 minutes. Adjust for salt / pepper and thickness. Serve with quinoa, rice or as seen a small salad.
